While I have never used an offset I have smoked pretty much everything with my barrel type (mine was a water pressure tank in its previous life)
Get yourself a good thermometer with probes for grate and meat. I have a ThermoWorks smoke and it’s well worth it
If you make a hanger type ring you can cook a huge amount of ribs vertically in very little space
Charcoal with a couple chunks of the wood of your choice
If you make a insulated cover (cardboard box here) you can use it all year regardless of temps outside and use very little fuel
Make sure it seals well enough that when you shut it down it goes out and you can really stretch your efficiency by reusing charcoal.
Doesn’t have to be fancy to work great
