We grow heirloom and hybrid tomatoes in our garden. We mix them all together. When we can tomatoes we do juice, sauce, stewed. We waterbath can them and put a tablespoon of lemon juice in each jar to help with acidity. I use a turkey fryer base instead of the stove to heat the water. Alot more BTU's and keeps the heat and mess out of the kitchen. The Ball canning book is a good resource. We also dehydrate them. Grind them into powder and use as a thickener. Gold medal variety produced some nice big ones this year for us. I ended up with 75 plants, 40 different varieties.
