You can sand the wood and collect the sanding dust. I use a random orbit sander with a dust collection bag to collect sanding dust. You can mix a thick slurry of Watco Butcher Block Finish with the sanding dust to fill the crack. You can work the slurry down deep into the crack with the blade of a pocket knife. After 24 hours of drying you can sand the area. The sanding dust will match the wood. Also, Watco Butcher Block Finish is FDA approved for direct food contact.

You can do the same thing with other brands of butcher block, cutting board or salad bowl finishes that are approved for direct food contact. However, you need a finish that contains a varnish like hardener. A straight mineral oil does not have a varnish like hardener. You can use urethane varnish and numerous other products to fill cracks but they are not approved for direct food contact.
