Here in western Oregon they need moisture to keep and not shrivel. I use slatted boxes with a 1" gap above concrete floor in fully insulated garage with insulated garage door. It never freezes in garage. It may get down to 20 degrees here 1 winter out of 10. Too damp in my springhouse. Dad had a fruit house with concrete floor and insulated with sawdust, walls and attic. He had a big bin in the back, on the floor. Keep completely separate from fruit like apples. I dig, knock off as much dirt as possible, let set a few days in the shade of my carport out of direct sun before storing so they get good and dry....James
