Baling wet is a lot like drying 30% corn, it can be done but the learning curve is steep. Your baler will tell you when it’s too wet.
Alfalfa, especially roped up from a bar rake gets really grabby, tough stuff. I like mine a little on the dry side, seems to roll up a lot easier. Not sure on exactly what the moisture is but a day wilt at least, couple days is still ok long as the leaves aren’t crispy I think you are doing better than dry
