We do chickens that way, start breast down for 2/3 of cooking time, drain and finish, breast up. I have done 1 wild turkey that way. I season breast with Dollar Tree no salt seasoning and a few pats of butter after turning. I also start with the oven preheated to 450, put meat in and turn down to 325 after 10 minutes. Seals the moisture in by searing the skin....James
