I dated a man who was a quadriplegic many years ago. He also had a great sense of humor. Maybe you could do a photo album for him. Facebook has this thing where you can turn all his posts and pics into a photo album. When I'm at a loss for what to get someone, I just get them Amazon gift cards. It's not as intimate, but then he could buy whatever he wanted.
