Up here, we usually shoot for one cut, but it also happens to coincide with the wettest time of the year, so we usually get it past full bloom, which isn't optimal. Rain damage is pretty common. Sometimes we get a second cut just when the frost is nipping at it in the fall, but that tends to make the alfalfa less winter-hardy.
