There's a large grower just outside of Chatham Ontario ( an hour east of Detroit) that leaves carrots in the field every winter, and digs in the spring for the fresh market. They cover the field with a thick layer of wheat straw to insulate things a bit. Apparently they keep better in the ground, than in cold storage if dug in the fall.
