If the rollers have a flat spot on them, are crushed or bent or missing, if the cones have flat spots or have spun on the axle so they're sloppy, if they're blue. If the bearing cage is cracked.

If you don't see anything wrong when they're clean, or if the grease is clean enough and they spin smooth, then they're fine for what you're using them for. Just don't overtighten them, look up the procedure and understand it, better too loose than too tight.
