The way I figure it I get paid for fat and protein, and I pay for the feed to produce lbs of milk and for trucking and other deductions. It doesn't cost me much different to make and market 100 lbs of milk that's 4% fat and 3.2% protein than it costs me to make and market 100 lbs of milk that's 7% fat and 4.5% protein, but my check is a lot bigger for the richer milk.
Which would you keep?
