My last 2 ovens have been convection. Since I don't read manuals I'm sure there are a lot of things that I could do with it that I don't. I know that when I use my mom's oven I do miss the convection aspect. Mainly what I experience is faster cooking times. I'm sure there are other added benefits but like I said I'm not big on reading manuals!!!
