My wife has 3 convection ovens. I know some things such as cakes she does not use the convection feature. Also doesn't use it for large pirces of meats such as inside rounds as the convection feature tends to dry things out as it uses forced air to help cook faster.
BTW, the reason for 3 ovens is that she is a caterer.
