There is really no cleaning the waffle cooker if a person is using the small Dash units. Other than wiping them off with a paper towel. The oil in the cheese stops any sticking that a person might get with waffles. You can make the mixture thin in the waffle iron if you want a more crispy chaffle. Another method that we do not use, but make them crispy is to first sprinkle cheese on the waffle iron, layer on egg, then another layer of shredded cheese. This puts the cheese up against the waffle iron so makes it more crispy like your fried cheese. Wife just mixes the egg up with the shredded cheese together then spoons it in so it comes out more like a waffle or bread consistency. You can change the cook time to make them more or less crispy though, kind of like you can cook eggs soft or hard. If cleanup is your worry, worry no more. Making chaffles in the little Dash units even I could do. I think you could probably make your fried cheese in the small Dash waffle makers. We also use the Dash griddle to do the chaffles as it makes more like a slice of bread without the waffle indention's. They both work equally well. For the 10-15 bucks each they are a no-brainer for anyone wanting to easily make an egg based bread substitute. Just wipe them off with a paper towel. Wife then stores hers on top of a paper towel inside a plastic container in case there is any other oil remaining from the cheese. Puts the container on the shelf till the next use which is usually the next day.
