If you can't get a hold of tester, you could use the microwave method to get an approximation of moisture.
Take 100 g of "wet" peas and microwave them in a plastic dish for a minute. Make sure to have a cup of water in the microwave. Weigh the peas. Keep microwaving them for a minute and then weighing them till the weight of the peas does not drop any more. Whatever weight in water that you lost (this assumes somewhat incorrectly that the "dried" peas are 0 % moisture) is the moisture level of the peas. There are a few assumptions and inconsistencies with this method but it gives you an approximation. When we harvest our native grass seed, this is the method that we use and it seems to work quite well.
From your description of the greens, they are a little on the damp side still.
