IF you want them dry you can have some chewy but must have most hard. 16% is dry and I had one of those little handheld case or jd testers and they worked pretty close. Quite often all but 1 or 2 peas in a pod will be hard. If you can keep air on them then I start at 19% as they will dry down fast. If you see some that look like big garden peas then usually thats too tough.
