Northerner also, not even sure if this would qualify as jambalaya, but goes well at this house: 1# smoked sausage or kielbasa cut into bite size pieces, 3 stalks celery cut into bite size pieces , 1 sweet onion chopped, 1 sweet red pepper and 1 sweet green pepper both chopped ( you can use hot peppers if you like,but that don't work at this house ) , 3 ears of sweet corn cooked and cut off the cob (in sweet corn season, we use what was left-over from the previous evenings supper ), 2 cup rice, 2 cup boiling water . In deep skillet, brown sausage or kielbasa and remove from skillet leaving renderings in pan, then sautee celery, onion and peppers in same skillet. After vegetables have absorbed the renderings and are partially cooked , add meat, corn, rice and boiling water, season with some paprika and red pepper flakes , you may or may not need salt, depending on saltiness of meat, then cover immediately and reduce heat to low. Let steep for about 10 - 12 minutes, aggressavly shuffling pan back and forth several times to avoid sticking , however DO NOT REMOVE THE LID. After 10-12 minutes turn off heat remove lid and let any excess water evaporate. Serve with fresh tomatoe wedges on side and garnish with chopped parsley on top. Hope this works well for you
