Daughter made lasagna with 1/8"th slabs of zucchini instead of pasta. Very good and couldn't tell much difference. There is a zucchini dish at a Chinese buffet I really like. It's shredded and baked in a cream sauce with cheese on top. Wife tried making it a week ago but got too runny. Tasted ok but told her it was closer to a soup consistency.
