If anybody could at least give me the actual names of these types of connectors that'd probably be a good start.

It sound like you've already identified the Deutsch connector. They're pretty simple. The smallest ones are DTM, and used size 20 pins and sockets. The next size up is DT, using size 16 pins and sockets, then there is DTP using size 12 pins and sockets. (Thus far assumes you are talking about small rectangular connectors). Larger round connectors all have a part number, but there's so many different configurations there's no point in listing them. The larger round ones can have a mix of terminal sizes.

The "crappy black plastic connectors John Deere uses on planters" are 37 pin CPC. Kinze used to use them on planters as well, and they have a part number to build an entire connector from scratch. That was always what I used for these.

The connectors Ag Leader uses for CANbus are ITT Cannon. Unless you understand what you are doing, I would not tamper with these. It's OK to extend a CAN line, but it is potentially troublesome to extend a CAN stub. I recently bought some terminals and the proper crimper tool for them. I would use it to repair a harness in the field, or to make an entirely new replacement from scratch, but I would be reluctant to make extensions.
