I feel your pain. Hate having to make those decisions and know that it's a gamble no matter what ya do. I have heard all these good things about Bosch, and will likely look that way when we have to replace. For the time being, we have KitchenAid and really like them. Dishwasher, cooktop and fridge are going on 8 yrs old and we've been quite satisfied so far. Did have a seal issue on the DW early on, but that was a relatively easy fix and no further problems. DW is  quiet (not as quiet as Bosch) and does an excellent job cleaning. I don't know about canning on this cooktop, but I would think it would be fine. It's gas, and cleans really easily when I make a mess. Grates, knobs, and burner discs all go in the dishwasher and just wipe down the glass top. I sure wouldn't be afraid to go KitchenAid again.
