Are they GF for medical reasons or because of the fad diet? If for medical reasons I'd just ask them what they'd trust cake-wise.
Most of the special made gluten free products are an acquired taste...when it's been a decade since they've had a real donut the crappy GF ones start to taste good.

For meals it's easier if you keep it simple; meats (with no added sauces or spices) fruits, veggies, mashed potatoes with (real) butter from a new/sealed container. Oh, and no wooden utensils, bowls, or cutting boards.

You may wanna ask your question over at the celiac board: http://www.celiac.com/gluten-free/
