The true gas is clear. When you bleed the nh3 off between valves when switching tanks the gas you hear last is clear. The smoke you see when the liquid nh3 is converting to the clear gas. If the gas looked like the smoke you would always be able to see it, but instead it dissipates into the clear gas form.
