Dice up one fair sized onion, two carrots and two stalks of celery and then cook for about 10 minutes in some oil of your choice. Add a pound of white beans that have been soaked over night along with the bone, and water or chicken broth to cover, bring to a boil and simmer until the beans are done. Don't add any more salt until the beans are done. I like rosemary in my bean soup, but not all do. When the beans are done pull out the ham bone and remove all of the meat. Then dice up the meat and return to the pot. Season to your liking. Some folks add a diced up potato. Cornbread goes good with bean soup.
