Here in Michigan you can sell an animal and have it custom processed at at dozen different places. If you want to sell it by the package, 1lb burger, 2 T-bones etc you have to have a Michigan Food License (which we have ) and it has to be slaughtered in a USDA inspected facility which are few and far between. Since covid we get lots of calls about beef but the price of a 1/4 scares a lot of people away. Right now I am a year out on getting anything into the local USDA plant. The few times my wife has advertised meat that we have had processed there, the phone rings off the wall.

Legally, how far can you break an animal down that’s processed in a non-USDA inspected facility? Nobody questions 1/2’s or 1/4’s but can you do 1/16’s, 1/32’s , 1/64’s????

I think there are a lot of people that only want to spend $50 a a time.
