Subject: Beef ribs on a weber



Amherst WI
Just got a steer back and I kept the ribs this time.

What’s the best way to go to make the ribs on the charcoal grill? What wood should I use? I have Pecan I planned on using.

Since temp can be hard to keep even would smoking them for a few hours work and then switch to the over later work?
