canadian contracts to sell grain?

Subject: canadian contracts to sell grain?

Don't sell much grain and am new to contracts. Did sign two contracts with two different companies. The first was for 4 loads to be picked up within a month. Took two near the start and that was it. They also paid them. The second company picked up the 4 they contracted and paid. Whats the use making a contract if some companies just buy what they want. Do those contracts protect them so that they for sure can get the grain if they want it and if they don't they just over look them? Are those contracts in favour of the buyer and no protection to the seller? Thanks for any information.
