There seems to be a sweet spot where one is big enough to support a family and to implement technology that will reduce costs, and yet not so big that you need the headaches of employees.
Knowing how Universities crunch numbers, I'm pretty sure that $60/head would be to cover the opportunity costs of any owned assets. So, if you own some or all of your land or cows your cash profit would actually be better.
