I'm with you there on the light marbling. The thing I've found a lot of times looking at meat in the grocery...is that maybe just the marbling in the steak cut isn't the only issue when determining grade by the inspector. I too would have given that steak a low "choice" grade...but who knows.. an adequate cap of fat might make the difference in the inspectors eyes.
