in my opinion, you will have a hard time moving that much meat in that large of bundles. I think if you want to move a lot of beef you will need a retail outlet with steady customer traffic and be able to sell in small increment packages.

Farmers markets are one way, another around here that seems successful is a small locker meat store that specializes in selling its own processed meats, especially flavored brats. They also have cheeses, deli meats and the normal case and freezer meat selections. They appeal to the backyard BBQ'er and are stocked up spices, sauces and those type of supplies in addition.

I would also think you would want to be in a position to do your own kills and processing which opens a whole nother can of worms.
