All I can add is that my mother used a bit of home-made applesauce in raspberry jam so it was a perfect texture-not stiff or runny. To blueberry she added a bit of lemon juice to make the flavor pop.To peach, she added crushed pineapple to make the flavor pop. I have NEVER tasted any preserves as good as hers.The only one she did not add something to, as I remember was strawberry
