| Not quite sure about that. When we started finishing in 2001, we grew miniature horses. The pigs were tall and quite thin. All pork had to be injected with something to make it edible. However, once fat became less of a death sentence (thank you Dr. Adkins) the fat was breed back in. I will agree it's not as fat as in the past, but my pigs are pretty decent. We eat on or 2 per year of our own.
It's clear the pigs we grow have reasonable meat quality and good feed efficiency (that whole staying in business part), but there are genetics out there that produce much better meat just not much money. | |
