No joke. It is the only part of the hog that has any flavor left to it. The leaders of the industry have spent the last 20 years making the hogs so lean that they now taste as crappy as chicken. You can usually buy crappy tasting chicken a lot cheaper than crappy tasting pork.
I think this is a joke but maybe not, what do I know?
