Ellsworth, WI is the self proclaimed cheese curd capitol of Wisconsin.  It's ALL they do.  

Our milk goes there.  Excellent product.  Ya gotta be there after 11:00 to get the fresh warm curds.... which are absolutely the best

They make the white cheddar curds, as they do not add the coloring to them
