Duluth, MN is fun a place to go. A lot to see and do along Lake Superior. Brainerd, MN has a lot of lakes to camp around. Camp @ Itasca State Park and walk across the Mississippi! Detroit Lakes is another lake area with good fishing.
Minnesota offers a lot of fun things to see and do in the summer. You will only get a taste in one trip.
