I think the main difference is shipping and when the tomato is picked. Maybe the greenhouse Fry went to doesn't have to ship them as far but I think many of the store bought tomatoes are picked too early, and they have to be, so they don't spoil. I'm no expert at all on this but it is my understanding that alot of tomatoes are "treated" with growth regulators to keep them ripe after being picked a little too early, so they have a little bit longer of a shelf life.
If a tomato has a shelf life of one week, say it takes three days to process, package, and ship to the store. If you pick it two or three days before it would be considered perfectly ripe, then it could spend more time on display at a store, waiting for consumers to buy it. If you wait until it is perfectly ripe, it tastes better(arguably), but shelf life in the store might be cut in half and in reality, alot of your tomatoes probably arrive at the store already spoiled.
