Yes it is dug here (commercially) anytime the ground isn't frozen and the plants are mostly dormant. We've dug in the fall as early as late August and in the spring into May, although on either end your hurting the yield somewhat.

I use a food processor. Drinking excessive amounts of fine scotch while grinding it seems to help with the fumes... really. Grind it and then add the vinegar and a bit of salt. The timing of when you add the vinegar will determine how hot it is. IIRC, the quicker you add the vinegar the hotter it will be, letting it rest makes it a little more tame. Or the other way around.

I like it fairly hot, I wait about 30 seconds before adding the vinegar.

Do not mix up a big mess of it for a banquet and leave it in your wife's good Tupperware. You'll be buying new Tupperware if she doesn't like everything after that to smell like horseradish.
