Plus one on bite size pieces, soaking in Italian dressing 24 hrs and then wrap with bacon and grill it til the bacon is done. We have a deer camp where several people come out every night to eat. We eat really well, for instance last night we had deer, fried clams, shrimp boil, home made onion rings, fried potatoes and 3 kinds of fish. We didn't have duck last night but my point is, no matter what is on the menu, if it includes duck cooked with Italian and bacon, the duck is a favorite of most people there and it's always gone the quickest.

We do cook goose if someone brings it. It tastes a lot like the duck but much tougher.
