..Well here, I'm not makin' fun of a ruined dinner...I'm just saying it usually can be avoided when you take into account the amount of rendering you will get from a certain cut of meat. On steaks that are very well marbled...a good trim on the outside helps....and enough room on the grill to move them once the rendering process starts flaming up is a big help. You might have to go with more than one turning of the steak. On the grill....wait for the amount of time you usually allow, and if it flames up...then flip to the other side of the grill and start fresh with your timing. After it flames on that side of the grill, you move back to where it's burned off already...and finish them. Flexibility when you've got too much heat is your friend....:)
