When the grain is delivered, the landowner gets 30%. On a good year they might get 60 bu. corn x $5.00, on a bad year 30 bu x $3.00. But they can take crop insurance on their 30% to prevent a huge downside. OR put a min price/ac for the landlord of $125 (for example) and if their 30% falls below that you are responsible for making up the diff.
