There's no right answer really. A lot depends on what you want to do.

Adjustable machines can crimp a variety of fittings with the same dies but you have to have a smart operator and know the crimp specs, etc. It's a bit slower, a little more work and less idiot proof (unless you buy an extremely expensive digital programmable machine).

The more specific machines with their specific components for certain hose and fittings can be very fast and idiot proof. The weather head machine we have uses two piece dies that are rubber bonded and a spacer ring that bottoms out when proper crimp is achieved. It's pretty hard to screw it up, and very fast and easy to set up and use. However you are technically limited by what the machine and dies can crimp and for best performance need to stay with the weather head hoses and fittings it's compatible with.

If you are starting from the ground up, it's going to be best to pick a brand and stick with it. You can get away with mixing and matching somewhat but not everything is compatible with each other even across the same brand. If you just want to make a hose for a plow it's not a big deal, but if your making one that took you 4 hours to remove from your tractor then you probably want it done right.
