The diagram the pex supply shows is that the potable water will have priority so you are not pulling the hot water through the flooring loops. Another advantage I have read about is using the hot water for a pressure washer if you needed hot/warm water for washing. Granted, not looking to replace a hot water washer but would be handy for small jobs.
