I wonder if it isn't time to put it in a locked commercial style thermostat box? With the issues you describe, I think anything she can get to to push buttons is going to give you grief. Maybe do as others have suggested and have a dummy t-stat out where she can "adjust" it herself. You are a good man for doing the work to keep her safe.
