Finding certified cereal rye shouldn't be a big issue. Finding the "right" variety for you may be more challenging.

We planted up to 4 varieties trying to sort out what we wanted. Found as much as 3 weeks difference in maturity. Thats a big deal if you want all the growth you can get. The early variety wasn't necessarily the best yielding- but didn't care. Had other traits we liked more than the others.

Ultimately, we landed on one variety and kept growing that every year. For our selves as well as some we sold.
