when preparing a $150 hunk of meat for our whole family I was too nervous to try the 500 degress then off and let it set. Guess I wondered if my oven was nice enought to hold that heat for the necessary time. I think there are instrucitons that allow for 450 degress for so many minutes per pound then you can drop it to like 365 degrees or maybe lower for X amount of minute per pound further. It worked for me and I wasn't as nervous about it not being done in time. That and in our family the women don't care for med. rare or rare cuts so I needed to get more of it done. For my second time I split a huge one in half and cooked them for different times. Then you have 4 "done" ends to choose from and various stages of "doneness" for people to pick.

Don't sweat it, it's not that bad, but I was most nervous when I saw the price tag and didn't want to screw it up.
