The equipment you listed should give you good coverage. If you are using 2.4GHz for the omni, get the 5GHz NanoStations. Configure one NanoStation as an AP, the other as a client, and put them both in WDS mode. On the Rocket, be sure to enter the omni's gain into the config so the Rocket can adjust its transmit power to keep you within FCC limits. Also, be sure to turn AirMAX off on the Rocket, or your clients won't connect.

As with anything wireless, you never know exactly how it will behave until it's tested in your environment. Ubiquiti is cheap enough to experiment some without breaking the bank, and I think they make good stuff. My concern with using the one Rocket to cover everything, though, is that as your clients approach the 500' radius you're looking to get, they will still be able to see good signal from the AP but won't be powerful enough to transmit back to it. You'll just have to test it and see.
