Pedee, Oregon | 1 can of pumpkin + 1 box double fudge cake mix. Mix it up and put it in a lined muffin pan. DON'T add any other liquid. Bake as per muffin directions on box. Not a huge amount of pumpkin flavor, but you could use a yellow cake mix instead of chocolate to get more pumpkin taste.
My wife does a spiced pumpkin muffin that is very, very good. Similar concept just pumpkin and dry ingredients. Spice and nuts/fruit/etc to taste.
