Mmmnnn, pumpkin waffles, pumpkin pancakes, add it to a fruit smoothie, pumpkin bars which is basically pie but on a shortbread crust baked in square tin, add a spoon or two to cookie dough. Almost any cake using apple sauce, you can interchange with pumpkin puree.
