A "split half" from a moderate size beef breed steer seems to be the easiest to sell. The split half (a quarter but is half of a half) includes all cuts, is manageable cost and freezer space wise for more potential customers. A split half from my 1100-1150 lb yearling Hereford steers coming off of grazing corn weighs about 110 lb with the minimum bone and fat trim I specify. I don't know why you would go with a dairy breed for freezer beef. There are reasons some breeds are dairy breeds and some are beef breeds. They are not the same. Fed out dairy breed steers obviously meet some packer needs, but for freezer beef go with a beef breed. #1 is to decide who your likely customer is and what he wants to buy. Good luck. Jim
