Subject: Explain the concept of a crop being "hard on the soil"

West Central Alberta Coldest, wettest edge

I've never understood people stating that a crop is hard on the soil.  Is this a throwback to the days before chemical fertilizers?  Is it from areas with chronic water shortages and some crops take too much water?  Or because some crops leave very little organic matter behind?
