I don't know if we are eating more wheat than before, as the consumption of bread has been reduced in modern times, but of course we eat much more junk food that contains wheat, like cookies, crackers, pasta and what not. I hope we will never see GMO wheat. So far we've been able to develop new varieties and hybrids the traditional way, for instance introducing the dwarf gene. Most modern GMOs are about introducing totally foreign genes, like being able to withstand proprietary pesticides, or to produce them. We've seen with corn already that it worked for a few years, but pests soon develop resistances to these methods. , and we still haven't a single credible long term toxicity study of GMOs.
